Bombay biryani is a variety of Indian biryani, consisting of layers of flavored basmati rice, potatoes, spicy chicken or  mutton,  added some fried onions, flavoured with saffron and kewda.

  1. 1 kg Chicken
  2. 3 1/2 cups Long grain Basmati Rice
  3. 2 tbsp Ghee
  4. 1 Cinnamon
  5. 2 Green Cardamom
  6. 1 Bay leaf
  7. 4-5 Onions, finely sliced
  8. 2 Tomatoes, diced
  9. 2 Potatoes, peeled and quartered
  10. 2 tbsp Garlic paste
  11. 2 tbsp Ginger paste
  12. 1/2 cup Yogurt, whipped
  13. 1 cup Oil
  14. 1/2 tsp Turmeric powder
  15. 1 tsp Kashmiri Red chilli powder
  16. 1 tbsp Bombay biryani masala
  17. 1 tsp Lemon juice
  18. 1/4 cup Milk
  19. A few Saffron strands
  20. 1 tsp Kewda
  21. 2 tbsp Coriander leaves, finely chopped

Steps to make to make Bombay Chicken Biryani

  1. Marinate chicken pieces with ginger paste, garlic paste, turmeric powder and 1/2 tsp salt.
  2. Fry potatoes in a separate pan with adding orange food colour and keep aside.
  3. Fry sliced onions in hot oil until golden in colour.
  4. Take 1/4 of fried onions and keep aside for further use.
  5. Add tomatoes in fried onions and fry until oil separates.
  6. Add marinated chicken, yogurt, Bombay biryani mix, chilli powder and stir fry for 10 minutes.
  7. Add fried potatoes and mix well.
  8. Add 1 cup water over and cook on low heat until chicken is tender.
  9. For rice, heat 1 tbsp ghee in a pan and put whole masalas.
  10. Add washed rice, fry for a minute and add 1 tsp salt and 6 cups water.
  11. Cover and cook till rice semi cooked.
  12. Heat 1 tbsp ghee and spread half rice in pot.
  13. Sprinkle half of fried onions and chopped coriander leaves.
  14. Mix saffron and kewda in milk and add pour this over rice.
  15. Spread cooked chicken over it, then top with remaining rice and add lemon juice.
  16. Again sprinkle fried onions, chopped coriander leaves and saffron milk.
  17. Cover the pot and cook on low heat until rice is fully cooked, mix well and serve hot.
