  9. 1 each Red, green and yellow capsicum (sliced thin)

  12. 1 tsp Chilli flakes
  13. 2 tsp Mixed herbs
  14. 1 tsp Black pepper
  15. 2 tablespoons Tomato sauce
  16. 2 tablespoons Olive oil
  17. 2 tablespoons Tomato sauce
  18. to taste Salt
  19. 2 pinch Sugar
  20. 2 tablespoons Lemon juice
  21. 1/2 cup Hung curd
  22. 1/2 cup Cream cheese
  23. as needed Water

Steps to make to make Mexican Burrito Bowl / Mexican Rice Bowl

  1. Mexican Rice: First, heat a pan. Add 1 tablespoonolive oil. Add half of chopped garlic and saute' well. Then add 1 chopped onion and cook well. Then add 1 chopped tomato and cook till soft.
  2. Then add corn, peppers, carrots and saute' on high heat for 2 minutes. Then add herbs as per taste and combine well. Cook for 5 minutes. I like to sprinkle a little bit of grated cheese on top too! Mexican rice is ready.
  3. To make refried beans: Heat 2 tsp olive oil in a pan. Add 1 chopped onion, 1 chopped tomato, 1 tsp garlic and fry well. Cook till soft. Then add the boiled rajma / kidney beans, 1 tablespoon tomato sauce and 1/2 cup water. Cook covered for 5 minutes. Then add chilli flakes or paprika if liked, salt, mixed herbs and mix well. Cook for 2 more minutes and switch off heat. Refried beans are ready.
  4. To make salsa: Take a bowl. Add 1 chopped tomato, 1 chopped onion, 2 chopped cloves of garlic, lemon juice, 2 chopped green chillies, mixed herbs, 1 tablespoon tomato sauce and combine well. Then add freshly chopped coriander leaves and salsa is ready.
  5. To make sour cream: Take a glass bowl. Add cream cheese, Hung curd, salt, pepper, and 1 tsp lemon juice and whisk well. Keep in refrigerator till served.
  6. To make Burrito Bowl: Take a large glass bowl or individual serving bowls. Add a layer of rice at the base. Then later with sour cream. Then add layer of refried beans. Then layer with salsa. Or you can choose the layer sequence as per taste. Repeat the layers and top with rice layer. Spread with sour cream. Garnish with nachos. Serve this delicious Mexican Burrito bowl at once and enjoy!
