- Heat the oil in a pan on medium heat. Add peanuts and kaju, fry them and take them out on a plate.
- Now add some oil and add mustard seeds and cumin seeds let them pop. Saute in green chilies and curry leaves for a minute. Add chopped onion, and sprinkle some salt to speed up the process.
- Add turmeric powder, coriander powder, and red chili powder. Mix well and cook for a minute. Add cooked rice and fried peanuts and kaju. Mix everything very well.
- Turn off the stove and lastly lemon juice and fresh coriander leaves. Mix well and serve.
