  1. 1 Cup Idli rice
  2. 1/4 cup Urad dal
  3. 1/2 cup thick sour curd
  4. 2 tsp ginger paste
  5. 1 tsp green chilli paste
  6. 1/2 tbsp oil
  7. 1 tsp eno fruit salt
  8. 1/4 tsp black pepper powder
  9. 1/4 tsp red chilli powder [ or to taste]
  10. 1 tsp cumin powder
  11. 1 1/2 roasted sesame seeds
  12. to taste salt
  13. as needed water
  14. as needed coriander leaves to garnish

Steps to make to make Gujarati Idala

  1. Rinse idli rice and urad dal and soak them separately in enough water for 3-4 hours [ better soak it overnight].
  2. Drain them well and grind it adding enough water. The batter should be thick like the idli batter.
  3. Pour the batter in a deep bowl and add sour curd. stir well and keep the batter in a warm place to ferment overnight or for 7-8 hours.
  4. Before preparing the dhoklas, grease the plate in which you will be making the dhokla with oil. And add water in your steamer and let the water come to a boil.
  5. Add salt, oil, ginger and chilli paste to the batter and stir well. Now add eno fruit salt or baking soda to the batter and a spoon full of water if needed. [ Be quick enough to stir well, so that the fruit salt is distributed uniformly in the batter]
  6. Pour the prepared batter in a greased pan. And sprinkle with black pepper, red chilli, cumin powder and roasted sesame seeds.
  7. Place it in the steamer. Cover and steam for 20 minutes. [ Do not open the steamer in between.]
  8. To check if dhokala is cooked, insert a toothpick in the dhokla. it should come out clean.
  9. When done remove the plate from steamer and keep aside.
  10. Slice and serve with coriander chutney.
